Healthy and delicious shrimp and quinoa wok

Pitkästä aikaa reseptiä kehiin! Tein viime viikolla niin hyvää katkarapu-quinoawokkia, että mun on pakko jakaa ohje teillekin. Hyvän maun lisäksi tää on todella helppo ja nopea valmistaa ja aikaa siitä kun otin ainekset pöydälle siihen kun ruoka oli valmiina lautasella kului ruhtinaalliset 20 minuuttia. Tykkään kokeilla erilaisia ruokia ja meenkin usein aika mutu-tuntumalla, kuten tämänkin kanssa, ja sen takia esimerkiksi tarkkoja raaka-ainemääriä ei oikeastaan ole :D Olisin alunperin halunnut käyttää tässä munakoisoa, mutta koska kaupasta ei munakoisoja enää saanut, vaihdoin sen herkkusieniin ja kyllä muuten toimi! Mausteitakaan en omassa ruuanlaitossani oikeastaan käytä, sillä tykkään siitä, että raaka-aineiden luonnolliset omat maut pääsevät oikeuksiinsa, mutta tätäkin ruokaa voi varmasti maustaa ja varioida ihan oman mielensä mukaan. Tässä siis superherkullinen ja terveellinen reseptivinkki uuden viikon alkajaisiksi! 

Katkarapu-quinoawok
Quinoaa
(Sulaneita) katkarapuja
Oliiviöljyä
Kesäkurpitsaa
Paprikaa
Herkkusieniä
Kirsikkatomaatteja

Keitä quinoa paketin ohjeen mukaan. Pilko pala kesäkurpitsaa ja paprikaa ja paista ne pienessä määrässä oliiviöljyä. Pilko herkkusienet ja lisää pannulle kun kesäkurpitsa ja paprika ovat saaneet vähän väriä pintaan. Paloittele kirsikkatomaatit 2-4 osaan, lisää pannulle ja anna pehmetä hieman. Kun tomaatit ovat pehmenneet, lisää sulaneet katkaravut ja anna lämmetä. Lopuksi heitä quinoa pannulle ja kääntele muiden ainesten sekaan. 

// Haven't posted a recipe in a while! Last week I made so good shrimp and quinoa wok that I just have to share the recipe with you. Beside tasting delicious this is also really easy and quick to prepare, as it took me just 20 minutes from the start to having the food on my plate. I like to experiment with my cooking and I usually just trust my gut feeling, so that's what I did with this one too and that's why there isn't any precise measures for ingredients :D Originally I was planning to use eggplant in this recipe but because our supermarket didn't have those anymore I switched that to champignons and they really worked well with this recipe! I don't actually use any spices in my cooking either, as I like the natural tastes of the ingredients to be recognizable but I'm sure you can spice and vary this to your liking. So here's a super delicious and healthy recipe tip to start this new week! 

Shrimp and quinoa wok
Quinoa
(Melted) shrimps
Olive oil
Zucchini
Bell pepper
Champignons
Cherry tomatoes

Cook the quinoa according to the instructions of the package. Chop some zucchini and bell pepper and fry them in a small amount of olive oil. Chop champignons and add them to the pan when the zucchini and bell pepper have gotten some color on. Cut the cherry tomatoes into 2-4 pieces, add to the pan and let soften slightly. When the tomatoes are soft add the melted shrimps and let them warm a bit. Finally toss the quinoa onto the pan and mix carefully.
